Peanut Butter Cupcakes (Vegan)

The word “vegan” tends to scare people off, but once they catch a glimpse of these tasty peanut butter cupcakes, they’ll stop running. Who can resist the lure of cupcakes that are made of peanut butter, dark molasses and vanilla extract, among other things? Once the cupcakes are done baking and have had the chance to cool, chocolate ganache is drizzled on top and some cropped peanuts are tossed on. Tasty and healthy – what a combination!

Vanilla Cupcakes

Garbanzo bean- fava flour, arrowroot, and potato starch are the foundation for the Vegan, Gluten-free Vanilla Cupcakes. While those foundational ingredients may not sound appetizing on their own, when you add the lemon zest, agave nectar, vanilla extract and applesauce, you have the sweet components that create not only a more healthy dessert alternative, but a yummy variety as well. The vanilla frosting that completes this wholesome treat is just as healthy and yummy.

Vegan Chocolate Cupcakes

Although vegan cupcakes may sound like something that wouldn’t be enjoyable, these chocolate cupcakes debunk that theory. With their base of coconut milk instead of standard butter and eggs, these chocolate cupcakes come out light and fluffy, not to mention kind of healthy. Topped with a sweet mint marscapone frosting, which unfortunately isn’t vegan, thanks to the whipping cream and cheese that are in the mix, this combination of chocolate and mint will make anyone’s day.
