Vegan Chocolate Cupcakes with Peanut Butter Nutella Buttercream


While the thought of a vegan chocolate cupcake sounds slightly… strange, rest assured that the concept works, as long as you use the right substitutes: avocado and vegetable oil. However, the real show stopper here is the buttercream frosting. It is not vegan, but is still delicious. Consider the ingredients: unsalted butter, powdered sugar, vanilla extract, salt, milk, peanut butter and Nutella. Yes you read that right. The one-two punch of peanuts and hazelnuts (plus a little chocolate) is what really makes the difference.

With their base of coconut milk instead of standard butter and eggs, these chocolate cupcakes come out light and fluffy, not to mention kind of healthy. Topped with a sweet mint marscapone frosting, which unfortunately isn’t vegan, thanks to the whipping cream and cheese that are in the mix, this combination of chocolate and mint will make anyone’s day.
