Strawberry Pop Tart Cupcakes

Strawberry Pop Tart Cupcakes

It may be more acceptable to love cupcakes than Pop Tarts as a grown up with a day job, but this recipe shakes up that idea and proves we can love and enjoy both…at the same time.

Top vanilla cupcakes with homemade strawberry buttercream and a Pop Tart piece to bring a whole new level of yummy to Friday breakfast.

Sushi Cupcakes

Sushi Cupcakes

Happy April Fool’s Day! We doubt anyone is throwing a party for this holiday, but that doesn’t mean cupcakes shouldn’t be involved. These sushi cupcakes are the perfect “prank” for April 1.

These mini cupcakes may look like delicious sushi rolls, and they may seem like a disgusting idea, but they’re all for show. And flavor…vanilla, that is.

Shamrock Shake Cupcakes

Shamrock Shake Cupcakes 2

Happy St. Patrick’s Day!

These Shamrock Shake Cupcakes are inspired by the seasonal shakes and are a fun dessert to serve up around St Patrick’s Day.

The cupcakes are buttermilk cupcakes flavored with vanilla and peppermint extracts, then dyed with green food coloring. I used lightly sweetened whipped cream instead of regular frosting as a nod to the real milkshakes. Whipped cream is light and contrasts well with the cupcakes. Add a few green sprinkles and a short straw before serving, then enjoy!

Fresh-Squeezed Mimosa Cupcakes

Fresh-Squeezed Mimosa Cupcakes

Today we’re drinking mimosas and eating them too. Bakers, let’s brunch. Cocktails and cupcakes.

Think about those two for a second. Does it get any better than that pairing? Throw weekend brunch in there and the answer is no, it does not get any better. Because weekends are made for champagne in your cupcakes. Ok?

Vanilla Almond Cupcakes

Vanilla Almond Cupcakes

These cupcakes are light and subtly sweet. The vanilla almond cupcake has vanilla tones with sliced almonds right in the mix. The cake is barely sweet to allow the almond to shine.

The frosting is a basic vanilla frosting with a hint of almond extract to cut the sweetness. The flavors in this cupcake really shine—neither the vanilla or almond outshine each other. These cupcakes are perfect for afternoon tea (or a small sweet treat for your love).

One Bowl Vanilla Cupcakes for Two

One Bowl Vanilla Cupcakes for Two

Let’s face it: sometimes we all need a dessert that only makes two servings. Haven’t you always wished you could make just enough dessert for yourself? Or yourself and one other person?

These are definitely your typical white cake; fluffy and soft, full of vanilla flavor, and the perfect vehicle for some fluffy white frosting. And it only takes one bowl! Not creaming, no mixer, no folding… just you, a bowl and a spoon.

Vanilla Mint Cupcakes with Chocolate Drizzle

Vanilla Mint Cupcakes with Chocolate Drizzle

The fluffy moist vanilla cake, topped with a cool, creamy mint frosting and finished off with that sweet hint of chocolatey goodness, makes these cupcakes so incredible.

They are soft, refreshing and decadent, adorned with a bonus piece of chocolate, which makes them all the more perfect.
