We’re used to lemon cupcakes. We’re used to pumpkin cupcakes. Raspberry, blueberry, even. But…beetroot? We’ll be the first to admit, we were a wee bit hesitant to leap into the cupcake pool with these babies. But after seeing the beautiful color and the gorgeous shape, topped with some tasty chocolate ganache…it didn’t take much convincing. Maybe they aren’t as scary as they sound and, instead, are just as tasty as they look. Plus, they’re an easy, tasty way to get your vegetables and share a (relatively) healthy dish! We think they’re worth a try!
