Fresh Peach Cupcakes

Fresh Peach Cupcakes

If you haven’t taken advantage of peach season yet, there’s still time! While the peaches themselves may be the healthier option for snacking, there’s no denying that these sweet treats take the cake.

These goodies are all peach, all the way through. Start with a basic vanilla cupcake, add peach puree and top with homemade peach frosting (including Schnapps), and it’s tough to go wrong with this summer dessert.

Chocolate Seashell Cupcakes

Chocolate Seashell Cupcakes

Not much says summer more than seashells and sand.  In this case, the ‘sand’ is brown sugar and the ‘shells’ made of white and milk chocolate.

Vanilla cupcakes covered in light blue vanilla buttercream and topped with homemade white and milk chocolate sea shells. Seems like a much sweeter way to collect shells than any we’ve seen!

Lemon Cupcakes with Fresh Blueberry Buttercream

Lemon Cupcakes with Fresh Blueberry Buttercream

These Lemon Cupcakes with Fresh Blueberry Buttercream are a MUST bake this Summer! These fluffy cupcakes are bright and perky thanks to fresh lemon juice, zest, and lemon extract… and the blueberry frosting?! It’s sweet, beautiful, and colored 100% naturally with fresh blueberries. No food coloring here, thank you very much!

If you really wanna get fancy double the blueberry puree and drizzle some ON the frosting. It’s pretty, tasty, and super impressive. Top with a few fresh blueberries to make them a triple threat.

Homemade S’mores Cupcakes

Homemade S'mores Cupcakes

One of the best parts of summer is summer camp – and with that, s’mores. What’s not to love? Chocolate + marshmallow heated up till it’s gooey and melty, on top of a crunchy cracker…yum.

These s’mores cupcakes have a mini graham cracker crust, topped with small chunks of bittersweet chocolate, chocolate cupcake sprinkled with more graham cracker crumbs and chocolate chunks, and are finally finished with a marshmallow frosting. Toast the frosting with a mini torch or under the broiler and it gets a perfect toasted marshmallow taste and texture.

Ice Cream Cone Cupcakes

Ice Cream Cone Cupcakes

Cupcakes, in an ice cream cone? It all started with these tiny ice cream waffle cones.

Though they were fiddly and messy to make, the final result was so cute! The surprise load of popping candy in the centre was definitely a crowd pleaser and much giggling ensued.

And though I love my cupcakes, I definitely need to get my hands on more of these little cones so I can experiment with different desserts 🙂
