I know that a lot of people only associate red velvet with Christmas, but for me, red velvet is definitely a February thing. And for some reason this year, I really went full force with the V-Day eats.

These cupcakes were just the start, I loved them. I haven’t said that yet, but I really did love them. The chocolate flavor is awesome and subtle light flavors of the roses balance the chocolate out. AND that cream cheese frosting. Whoa.

That’s maybe the best thing ever. Seriously, so good.

My husband labeled these as one of the best cupcakes he’s ever eaten and I’d have to say I’m a huge fan myself!

They remind me so much of a good pistachio ice cream (one of my favorite flavors) and I love that they are perfectly soft and tender. Plus that buttercream is what dreams are made of! If you like pistachios don’t pass these by! They’re such a decadently delicious cupcake!

A Taste of Serenity Rose HIp Cupcakes


Rose hips may sound like a strange thing to put into cupcakes, but they result in a spice-cake-like treat. Combine the rose hip syrup with the other ingredients, in this case, cinnamon, almond butter, Greek yogurt, vanilla bean paste, sugar, flour and a few other things. Bake, and then top generously with rose hip buttercream (more rose hip syrup, powdered sugar, butter and salt) before serving. The rose hips make these the perfect treats to serve in springtime!
