Purple is a color that is usually associated with two things on opposite ends of the spectrum: royalty and Halloween. And now, thanks to this purple velvet cupcake recipe, the color and cupcakes go hand in hand. The trick lies in making traditional red velvet cake batter, and then substituting purple Amerigel for the red food coloring that gives red velvet cake its color. Topping these purple beauties off with a homemade marshmellow buttercream and some fondant bats “takes the cake” — almost literally!
