Pina Colada Cupcakes

Pina Colada Cupcakes

You could say that when you are boozing it up with these cupcakes, you’re doing it in a very classy way. Or you could just say, “TGIF!” Pina Colada Cupcakes are every bit as good as knocking back a few real-life Pina Coladas. The thing about this particular cupcake though, is that it has a double whammy when it comes to the alcohol. These babies are rum soaked AND filled with pineapple preserves, which no doubt acts as a wonderful vessel for gathering up a bit more of that rum flavor. It just might be that these are a don’t eat-and-drive delectable! (But wouldn’t they be worth it?)

Pina Colada Cupcakes with Fresh Kiwi Frosting

Decadence at its best is about these tropical tasting cupcakes filled with spicy pina colada and topped with a frosting of fresh kiwi fruit. Tasting one is not enough to satisfy anyone, you simply have to eat more to bring you back to normality. With a batter that is both thick and oh so rich, it turns out as a delicately moist delicious cupcake that is absolutely too tempting to resist eating.

PINA COLADA CUPCAKES

While this cupcake cant take over moms duties for the day, it can offer her a taste of a tropical getaway. Its a coconut cake brushed with pineapple syrup and then topped with a silky pineapple Swiss meringue buttercream. Topped with a cherry and a drink umbrella, this cupcake is about as close to the real thing as you can get without needing a straw. I made these cupcakes for a neighborhood block party and was told they were the hit of the party, so I promise you theyll be making more appearances around here in the near future.

Pina Colada Cupcakes

Are you ready for the simplest cupcake recipe ever? If so, then these pina colada cupcakes are for you. The batter contains an entire can of crushed pineapple and a box of yellow cake mix. That’s it. The frosting is slightly more complex, as it consists of cream cheese, crushed pineapple, coconut flakes and sugar. Yes, you read that right. Two ingredients for the cupcakes and 4 for the frosting – and your end result is a non-alcoholic pina colada-esque dessert. Yum!
