Mini Chocolate Peanut Butter Cupcakes

Nothing pairs together as perfectly as chocolate and peanut butter — and this recipe has plenty of both in an easy to make format. Take chocolate cake mix and follow the directions on the box, only add this twist when pouring the mix into the cupcake liners: alternate the mix with spoonfuls of the peanut butter filling (peanut butter, an egg, cream cheese and powdered sugar). Toss a few chocolate chips onto the center of each and bake. These are so good that you don’t even need frosting!

Peanut Butter and Jelly Cupcakes

Peanut Butter and Jelly Cupcakes are a sweet dessert treat reminiscent of the long favored sandwich. With a base of homemade white cupcakes the similarities continue. The difference however comes when we find the jelly inside the cupcake which is cored and infused with jelly and the peanut butter on the outside. The prime feature is the thick and rich peanut butter buttercream frosting piped on generously and finished off with another yummy dollop of your favorite jelly.

Cupcakes with Peanut Butter Cup Trees

It isn’t too late for cupcakes with Peanut Butter Cup trees, I promise. In fact, if you add some white royal icing on the tips of the “tree limbs” you could get away with this deliciousness all through winter! Imagine the possibilities for winter tree cupcakes for your office party in January, with the branches covered in white sugar crystals to simulate snow or even in March with green icing and just a smattering of sugar crystals indicating the end of winter and the beginning of spring. The possibilities abound in decoration and flavor options.
