CHOCOLATE PEANUT BUTTER CUPCAKES

These chocolate cupcakes have a surprise – an inner layer of peanut butter buttercream frosting underneath the outer chocolate coating! The cupcakes themselves are rich and moist. They contain many of the “standard” chocolate cupcake ingredients, including cocoa powder, sugar and buttermilk. The peanut butter buttercream (try saying that ten times fast!) goes on top once the cupcakes have baked and cooked. After the buttercream has a chance to set, dip the top of each cupcake in the homemade chocolate coating, then let it harden before serving. Surprise!

Who can resist the lure of cupcakes that are made of peanut butter, dark molasses and vanilla extract, among other things? Once the cupcakes are done baking and have had the chance to cool, chocolate ganache is drizzled on top and some cropped peanuts are tossed on. Tasty and healthy – what a combination!

Few things go together better than peanut butter and jelly. These peanut butter cupcakes with peanute butter frosting and jelly exemplify that. Mini Chocolate Peanut Butter Cupcakes

Nothing pairs together as perfectly as chocolate and peanut butter — and this recipe has plenty of both in an easy to make format. Take chocolate cake mix and follow the directions on the box, only add this twist when pouring the mix into the cupcake liners: alternate the mix with spoonfuls of the peanut butter filling (peanut butter, an egg, cream cheese and powdered sugar). Toss a few chocolate chips onto the center of each and bake. These are so good that you don’t even need frosting!
