While the thought of a vegan chocolate cupcake sounds slightly… strange, rest assured that the concept works, as long as you use the right substitutes: avocado and vegetable oil. However, the real show stopper here is the buttercream frosting. It is not vegan, but is still delicious. Consider the ingredients: unsalted butter, powdered sugar, vanilla extract, salt, milk, peanut butter and Nutella. Yes you read that right. The one-two punch of peanuts and hazelnuts (plus a little chocolate) is what really makes the difference.

Nothing says “autumn” quite like a pumpkin cupcake. Add in the cheesecake filling, and top them with nutella buttercream, and you have yourself a very delectible, fall-themed cupcake in your hands. The trick to making these? Assemble the cheesecake and bake it. Then, as you’re spooning the pumpkin cupcake batter into the liners, add in a cupcake-sized chunk of cheesecake. Smother it with more batter and then bake. Sounds simple, right? It is!!
