Cupcakes don’t have to be sweet. When made from savory ingredients, these mini chicken parmesan meatloaf cupcakes are more like appetizers, or can be used as a dish at the dinner table, alongside other things. The best part of these chicken cupcakes may not be the seasonings or even the chicken. Instead, the mozzarella cheese filling, the panko and parmesan topping and the warmed marinara sauce (for dipping!) take the cake – almost literally.

Skinny Meatloaf Cupcakes with Mashed Potato Frosting are an unlikely cupcake to be sure, but are such a cute dinner idea that they beg to be made for potlucks, brunches, buffets, or other finger food appropriate gathering. What makes these skinny is that instead of ground beef the meat is turkey. The tiny meatloaf is baked in tin cupcake liners and the homemade mashed potato topping is piped on to resemble frosting.
