Mini Chicken Parmesan Meatloaf Cupcakes

There is no rule stating that cupcakes have to be sweet, sugary confections coating in frosting. In fact, these mini chicken parmesan meatloaf cupcakes are baked in a cupcake tin – just like “regular” cupcakes, and there is no sugar anywhere in the recipe! Instead, they consist of ground chicken, cheese, eggs and some vegetables. When mixed together, sprinkled with breadcrumbs and baked in the aforementioned cupcake tin, they are just as tasty as “regular” cupcakes, just in a different, healthier way!
