Mango rum cupcakes are definitely an adults only treat, but they could be served for any occasion, from New Years’ Eve to summer barbecues, depending on what sort of mango you use. The recipe calls for pureed fresh mango, but frozen, dried or even mango essence would work. The cupcake batter also contains rum, which is what makes these for adults only. The frosting is mango meringue, complete with more pureed mango, egg whites and sugar. Bake, top and serve!
