We’re eating our margs today, ok? These cupcakes with tequila? They’re for cinco de mayo // the cult obsession with margaritas. Proud member right here. I know you are too.

What I have for you today is a very basic lime cupcake recipe. And by basic, I very much do not mean “boring”– I mean simple! Crazy simple. So much so that when I taught this recipe the other night/spilled confectioners’ sugar all over the counter like I do EVERY SINGLE TIME, readers went totally bonkers over their simplicity. That may just be in my head but I swear they’re really easy.

AVOCADO LIME CUPCAKES


If you’ve gotten tired of the same old boring chocolate, white and vanilla cake cupcakes, look no further. This summer-y “alternative” cupcake is made from some standard ingredients: flour, sugar, butter and eggs, but is flavored with some non-standard ones: avocado and lime. The frostings (there are two atop these treats) consist of avocado (mashed avocado, butter and sugar) and lime cream cheese (cream cheese, butter sugar and lime extract.) Are you ready for something different?

COCONUT LIME CUPCAKES


There’s something delicious-y summery and light about these coconut lime cupcakes, although you can serve them year-round without any problems (as long as you can find limes at your local market.) The cupcakes contain both lime zest and lime juice, as well as shredded coconut. The frosting is another blast of lime and coconut, thanks to the coconut extract and lime juice mixed in with the other buttercream ingredients. Top with a little shredded coconut and enjoy!

Eric Lanlard’s key lime cupcakes recipe


A little key lime goes a long way in these beautifully decorated key lime cupcakes, courtesy of Eric Lanlard. The batter contains grated lime zest and lime juice, among other things. Once these treats are baked, they are then topped with lime syrup (made from icing sugar and limes), white chocolate frosting (white chocolate, whipping cream, butter, icing sugar and more lime zest and juice) and then crystalized lime peel. All in all, these sweet treats are a lime lovers delight!

STRAWBERRY LIME CUPCAKES FOR THE BIRTHDAY GIRL


The following Sunday we celebrated again, this time with a proper birthday dessert: Strawberry Lime Cupcakes. I took my favorite white cupcake recipe Perfect White Cupcake: Recipe for Vanilla Bean Sour Cream Cupcakes and brightened them up with some lime zest.

And for such a sweet girl who loves the color pink I made sure to top them with some delicious pink strawberry lime frosting to which Logan informed us that he likes strawberries as long as they are in frosting! These are definitely a new favorite for all of us.
