Strawberry Lemonade Cupcakes

There is nothing better than the delectable combination of sweet, succulent strawberries and bitter, tart lemons…the best part is that they’re in season at the same time and often find their way into a lovely pairing in drinks. If fruity drinks aren’t your thing, though, it’s totally understandable if you want to go ahead and make these cupcakes instead. They’re the perfect combination of sweet and sour that just SCREAM summer by the pool, with your sunglasses on, and a delicious cupcake in your hand.

Lemon White Chocolate Cupcakes

Lemon White Chocolate Cupcakes

A taste of zesty lemon tempered with a hit of white chocolate mousse topping is going to create a love for cupcakes like you have never experienced before. This topping is actually an amazing mix of instant pudding and whipped cream! Can you imagine? The white chocolate flavor comes from the pudding, so go ahead and indulge. If you want to substitute the white chocolate flavored pudding with a vanilla pudding, no problem, but expect to see a yellow rather than white color to your topping.

Rosemary Lemon Egg-Cupcakes (For Easter or Anytime!)

Rosemary Lemon Egg-Cupcakes

It’s true: I don’t think “rosemary lemon” when I think cupcakes, either. In addition, these cupcakes are made in quite an unusual way – in empty eggshells! However, neither one of these facts detracts from the simple truth that these little beauties are a heavenly bite of perfection. This classy treat is all about flavor, texture, and a delicious understated sweetness that’ll keep you coming back…even if you don’t like rosemary. Batter up!

Lemon Blueberry Cupcakes

Lemon blueberry cupcakes sound like a magnificent summer treat – and they are, but they can also be enjoyed year-round. The batter of these cupcakes includes whole blueberries, lemon juice, lemon zest, sugar, cake flour, vanilla extract, milk and several other ingredients. Once they have baked, top them off with some lemon cream cheese frosting, a few whole blueberries, and serve. The best part about making these cupcakes it getting to eat them afterwards!

Lemon Mochi Basil Cupcakes

There are a number of different “classic” cupcake combinations, but one can become tired of them pretty quickly. If you’re tired of the usual vanilla and chocolate cupcakes accompanied by either vanilla or chocolate frosting, then make sure to check out these lemon mocha basil cupcakes. The cupcakes themselves are made of a combination of both standard all purpose flour and mochiko (a type of rice) flour, hence the name. The frosting is a lemon basil buttercream that compliments them perfectly. Who needs classic!
