Sundae Cupcake (with faux ice cream)

Ice cream cupcakes are tasty, but have one downside – they melt and quickly get soggy, and thus need to be served and eaten right away. However, if you can make ordinary cupcakes look like sundaes, without using ice cream, you have far more options when it comes to eating and storing them. These sundae cupcakes fall into that category. They are topped with a scooperful of frosting that looks like a scoop of ice cream, and are drizzled with chocolate ganache and a few other toppings. Yummy!

Ice Cream Topped Angel Food Cupcakes

Ice cream is a classic summer treat – but these ice cream topped cupcakes may just take over that honor. These angel food cupcakes (made from a boxed mix – nothing complicated) are topped with ice cream. But, it’s not just ANY ice cream. Rather, it’s vanilla ice cream that has been mixed with either homemade strawberry sauce or homemade blueberry sauce. You can leave one portion of the ice cream unmixed in order to have a batch festive red, white and blue patriotic treats.

ICE CREAM CUPCAKES

Not only are these ice cream cupcakes a great treat to enjoy on a hot summer day, but they are easy to make as well. The cupcake “base” is made from a brownie mix, only poured into a series of cupcake liners instead of a single pan. Once they’ve baked, they are frozen, topped with melted ice cream, and then frozen again. Before serving, toss on some frosting (homemade ganache works well) or a spoonful or two of whipped cream.
