Easter Funfetti Cupcakes


A Funfetti cupcake is a special cupcake, perfect for making at Easter as it has mini eggs set in the twirled vanilla frosting. With a regular cupcake when out of the oven, cut out a hole in the center and fill it with a surprise of your favorite instant pudding mix. Twirl on a vanilla topping and then arrange at least three mini eggs on it. You now have the perfect Funfetti cupcake, which will delight and please the whole family.

Gluten-Free Tuesday: Funfetti Cupcakes


These yummy super duper cupcakes besides being gluten free do not have any dairy or corn in them. Soy-free shortening added to the dry ingredients, makes them perfectly light and fluffy non-allergic cupcakes. You do not even have to use a food processor; simply use the paddle attachment of your cake mixer to cut in the shortening. Adding sprinkles to the topping gives them a look that is really deliciously appealing.

Sprinkles, sprinkles and more sprinkles are the defining elements of these homemade funfetti cupcakes with milk chocolate frosting. One half-cup of sprinkles go into the batter to make the “fun” in the “funfetti” name. The rest of the recipe is a basic vanilla cupcake batter, complete with ingredients like flour, vanilla extract and eggs, among other things. The frosting is a milk chocolate buttercream (complete with cocoa powder and more vanilla extract.) Top with two different types of sprinkles: rainbow and edible glitter stars to complete the sprinkle cycle!

In fact, these are so easy to make from scratch that it’s crazy to think that a boxed mix is even needed! Make a basic cupcake batter from flour, eggs, and a few other things, including vanilla extract and almond extract, then toss a handful of rainbow sprinkles into the dough. It’s that simple! The frosting on these colorful cupcakes is a super-simple vanilla buttercream.
