For a taste of something different, check out these fruit filled lemon cupcakes. The lemon (both juice and zest) is combined with vanilla, coconut milk, brown sugar and all purpose flour, plus a few other things, to form the cupcake base. The filling, which consists of fruit preserves made from chopped up fruit (berries usually), sugar and more lemon juice and zest, is added to the middle of the each cupcake after they emerge from the oven. Once that is done, top them with a homemade lemon buttercream frosting.
