These cupcakes were designed with coconut lovers in mind. The batter consists of softened coconut oil (substituted for butter), unsweetened shredded coconut, and coconut milk. If you like limes, then you’ll enjoy the lime zest and lime juice that are in the cupcakes as well. The frosting for these treats contains more of both of these ingredients – most notably, coconut oil, coconut milk, and lime juice. When you combine them with all of the other ingredients, you end up with a very tasty cupcake!

Cookie butter can be compared to Nutella – only it is flavored like sugar cookies, not hazelnuts and chocolate. Either way, it is just as tasty, and just as versatile.
