Orange Creamsicle Cupcakes

Orange Creamsicle Cupcakes

As a Texan currently living in gray and dreary Germany, I miss the sun. My husband and I just returned from three weeks visiting friends and family in the South where we enjoyed t-shirt weather for all but a few days. When we returned to Berlin, it was 23°F and in the past 9 days, we’ve had a few hours of sunshine. I’ve never had a harder time getting out of bed!

I don’t like coffee or tea so for a pick-me-up, I turn to citrus goodies this time of year. They always boost my mood and make me a little more energetic. At least until the sugar high is over. 😉

Creamsicle Cupcakes

Creamsicles – yes, the tasty ice cream treat – become cupcakes in this daring recipe. The batter is made from vanilla cake mix, a can of orange pop (or soda, depending on what part of the country you live in) and all of the items that the cake mix requires. The frosting consists of Cool Whip, skim milk, vanilla pudding mix, the juice of one orange and orange food coloring to give it that perfect creamsicle flavor. Think back to your childhood as you eat these scrumtious cakes!

Orange Creamsicle Cupcakes

These orange creamsicle cupcakes are citrus, sweet, light and bright. They look like the perfect sunny day, making them perfect for summer. The citrus cream cheese frosting is free of egg and dairy, vegan and gluten-free as well. The pulp from one orange is added into the cupcake along with orange soda, making this cupcake as orangey as can be. You will love the light citrus cake topped by cream cheese that has been flavored with real orange juice, making this the perfect fruity zesty dessert.
