Gingerbread Icebox Cupcakes

Gingerbread Icebox Cupcakes

Gingerbread Icebox Cupcakes could not be easier or more delicious! A simple No-Bake dessert topped with Salted Caramel Sugar and sprinkled with Cinnamon.

It’s as simple as layering whipped cream with some quality gingersnap cookies, and a sprinkle of cinnamon later, you’ve got a tasty dessert. It’s hardly even a recipe, and yet, it will only take one bite to convince you that it’s earned its cupcake title fair and square.

Gingerbread Cookie Cupcakes

Gingerbread Cookie Cupcakes

In honor of National Cookie Day and the holiday season:

Tis the season! These Gingerbread Cookie Cupcakes have a gingerbread cookie bottom topped with a gingerbread cupcake. Then they are topped off with a brown sugar cream cheese frosting and another gingerbread cookie for triple gingerbread love!

I loved how these Gingerbread Cookie Cupcakes turned out. I haven’t always been the biggest gingerbread fan, but I am now realizing what I have been missing out on. I love the subtle spiciness of the ginger. And turning that package of cookie mix into a cupcake creation? Game on!!

Chocolate Cupcakes with Peanut Butter Icing and Mini Fall Cookies

A major craving for one of my favorite sweet and savoury combinations, peanut butter and chocolate, was the driving force behind the baking plans of these little guys.

Rich, delicious, chocolate cupcakes topped with a cloud of peanut butter frosting. Sigh. Heavenly! To make heaven a little sweeter, add adorable miniature fall-themed cookies as toppers!

Dirt Pudding Cupcakes

Dirt Pudding Cupcakes

Dirt Pudding Cupcakes will make your Halloween buffet table more adorable than ever. What’s better than dirt pudding? Serving it up in a chocolate cupcake.

There’s something pretty indulgent about being allowed to eat something that resembles dirt – pulling gummy worms – or in this case, ghostly marshmallows, from the pudding is an added bonus. Serving these up at your Halloween party would be pretty awesome, I have to say.

There’s nothing like enjoying a Linzer tart, except for maybe this cupcake version. Instead of heading to the local bakery, spend a little time in the kitchen and whip up this ingenious cupcake twist on a yummy shortbread cookie.

Filled with raspberry jam and topped with crushed shortbread cookies and buttercream frosting, this treat is sure to put a smile on your face, even if it is Monday!

New and Improved Cookies and Cream Cupcakes

Cookies and Cream Cupcakes

It’s a tough trick to find someone who doesn’t enjoy Oreos, kid or adult, which is why this “new and improved” cookies and cream cupcake is sure to be a hit for any audience.

Unlike some of the other recipes we’ve shared, this one is a basic chocolate cupcake (no Oreo on the bottom), with not one, but TWO delicious frostings. Oh, and a real life Oreo cookie on top. Does it get better?

Oreo Cheesecake Cupcakes

Oreo Cheesecake Cupcakes

This food experience begins with an Oreo cookie on the bottom and ends with Oreo cookie crumbs infused with vanilla flavoring. So, Oreos. As if this wasn’t enough, top it all off with ganache milk chocolate. This cupcake is so good, it’s difficult to find the right words to pay it homage. The cheesecake filling plays a very important role too, in making this one mighty fine cupcake with staying power long after the last one has gone.

S’Mores Cupcakes

S'Mores Cupcakes

Whip up a big batch of these just before school starts again to help the kids feel a little less remorseful about summer’s end. These cupcakes have all of the favorites in them like chocolate, Oreos and marshmallows. The marshmallow frosting is just an added extra for a wonderful experience, and if you’re feeling extra generous with the sweets, why not top the icing with a milk chocolate square?
