Coconut Lime Cupcakes with Coconut Lime Cream Cheese Frosting

These cupcakes were designed with coconut lovers in mind. The batter consists of softened coconut oil (substituted for butter), unsweetened shredded coconut, and coconut milk. If you like limes, then you’ll enjoy the lime zest and lime juice that are in the cupcakes as well. The frosting for these treats contains more of both of these ingredients – most notably, coconut oil, coconut milk, and lime juice. When you combine them with all of the other ingredients, you end up with a very tasty cupcake!

Fudge Brownie and Coconut Ice Cream Cupcakes

What do brownie cupcakes, coconut gelato and coconut whipped cream have in common? Easy! They are all components in these fudge brownie and coconut ice cream cupcakes. The cupcakes are made from a brownie batter, which makes thicker, more dense treats. This pairs well with the coconut gelato and the coconut whipped cream (which doubles as frosting.) Simply layer on the gelato, top with frosting, sprinkle on some toasted coconut and chocolate sprinkles and serve. You won’t be able to eat just one!

COCONUT MILK CUPCAKES

There is nothing more classic than a white cupcake. However, once you add a little coconut to that cupcake, you end up with a new spin on this classic treat, something reminiscent of a Southern style coconut cake. The trick lies in creating the perfect combination of cupcake ingredients. This recipe uses coconut milk, vanilla extract and coconut extract to create just the right flavors. The frosting contains more coconut extract, with some sweetened coconut tossed in for fun.

Coconut Snowball Cupcakes

Coconut Snowball Cupcakes are the coconut lover’s dream cupcake! Unlike their iconic namesake, these feature a coconut cake. This cake is made of ingredients that combine to form a sweet and moist cake which is subsequently filled with a homemade coconut pastry cream and topped with further coconut goodness by way of a cooked coconut frosting. These make a lovely display when left their natural white, but for a themed party the coconut can be colored quite easily using food coloring.

VANILLA COCONUT SNOWBALL CUPCAKES

Like something that floated in from a fairy tale fantasy world, these delicately decorated delicacies are the result of a classic recipe for vanilla cupcakes – with a coconut slant and a sour cream frosting dusted with more coconut on top. It is the kind of cake-snack you can take to a family picnic as easily as to a fancy do at the mayor’s house – because they look as attractive as they taste good.

Coconut Cupcakes with Key Lime Icing

Just like there are triple chocolate cupcakes, there are also triple coconut ones. In this case, the coconut flavor comes from the combination of coconut flour, shredded coconut and coconut oil. Since these cupcakes are gluten free (and therefore somewhat healthier), they also contain eggs, sea salt, agave nectar and baking soda.) The frosting is a gluten free key lime, made from heavy cream, agave nectar and key lime zest. The results are tangy and coconut-y and completely irrisistable!

Mound/Almond Joy Cupcakes

These tasty chocolate cupcakes get their names from the Mounds and Almond Joy candy bars. The main difference, just like the theme song from the commercial is that these treats, just like Mounds bars, don’t have nuts in them. Instead, they have a filling made from shredded coconut, powdered sugar and sweetened condensed milk. The frosting on top is a luscious chocolate ganche, which turns these into a pretty close representation of the aforementioned chocolate bars.
