Mound/Almond Joy Cupcakes


These tasty chocolate cupcakes get their names from the Mounds and Almond Joy candy bars. The main difference, just like the theme song from the commercial is that these treats, just like Mounds bars, don’t have nuts in them. Instead, they have a filling made from shredded coconut, powdered sugar and sweetened condensed milk. The frosting on top is a luscious chocolate ganche, which turns these into a pretty close representation of the aforementioned chocolate bars.

Pina Colada Cupcakes


Are you ready for the simplest cupcake recipe ever? If so, then these pina colada cupcakes are for you. The batter contains an entire can of crushed pineapple and a box of yellow cake mix. That’s it. The frosting is slightly more complex, as it consists of cream cheese, crushed pineapple, coconut flakes and sugar. Yes, you read that right. Two ingredients for the cupcakes and 4 for the frosting – and your end result is a non-alcoholic pina colada-esque dessert. Yum!

Hummingbird Cupcakes


Don’t worry – the name of these cupcakes comes from the dried pineapple flowers that decorate them – NOT because they contain hummingbird! In fact the batter on these treats is made from a combination of cinnamon, flour, salt, butter, eggs, walnuts, crushed pineapple, banana and coconut, along with a few other, more standard things. After baking, cover them in a traditional homemade cream cheese frosting, before placing the dried pineapple flowers on top for a beautiful and tasty combination!

Easter Egg Nest Cupcakes


Easter may be a few months away but this doesn’t mean that you won’t be able to enjoy these Easter egg nest cupcakes. These cupcakes are made out of shredded coconut, which is perfectly baked until lightly toasted. The top part of the cupcakes are frosted with butter cream and topped with the toasted shredded coconut. The surprise Easter candy egg is placed in the middle of the toasted shredded coconut to make the egg look like it’s nestled in a nest.

Coconut Cupcakes
