Maple Cinnamon Peach Ice Cream Cupcakes

Gluten Free Quinoa Cupcakes


What makes gluten free cupcakes so different is their lack of standard flour. However, they still need something to hold them together and make them “cake-like.” In this cupcake recipe, the flour substitutes of choice are rice flour and quinoa. They also contain layer of spiced apples (made from scratch by apples, rum, water, sugar and cinnamon) as well as eggs, butter and more sugar. After baking, top them with a penuche frosting and then serve!

Hummingbird Cupcakes


Don’t worry – the name of these cupcakes comes from the dried pineapple flowers that decorate them – NOT because they contain hummingbird! In fact the batter on these treats is made from a combination of cinnamon, flour, salt, butter, eggs, walnuts, crushed pineapple, banana and coconut, along with a few other, more standard things. After baking, cover them in a traditional homemade cream cheese frosting, before placing the dried pineapple flowers on top for a beautiful and tasty combination!

Snickerdoodles are cinnamon-y sugar-y cookies that when done right, are quite tasty indeed. In comparison, these snickerdoodle cupcakes take the cake, quite literally. The batter contains both cinnamon and sugar, plus vanilla, flour, baking powder, eggs, salt, butter and milk. After baking, top each with a very heaping helping of meringue frosting (you can season it with vanilla, coconut or even coffee, if you’d like) before dusting on even more cinnamon and sugar. Streusel Topped French Toast Cupcakes with Maple Buttercream


Skip the traditional breakfast and go for this hand-held and super-sweet version of french toast: streusel topped french toat cupcakes with maple buttercream frosting!
