Caramel-Glazed Apple Spice Cupcakes

Caramel-Glazed Apple Spice Cupcakes

The cupcakes are practically the epitome of fall. Every flavor in them: the spices, the cranberries, the apples. Each element comes through in the finished baked good. If pecans are a big fall favorite, you can add some of them into the batter, as well, or use a large piece to garnish the top of each cake.

As the weather gets cooler, these cupcakes are sure to be warming, with hints of cinnamon, nutmeg and cloves, and scrumptious, with various autumn flavors and a delicious caramel glaze. Happy Fall!

Shamrock Shake Cupcakes

Shamrock Shake Cupcakes 2

Happy St. Patrick’s Day!

These Shamrock Shake Cupcakes are inspired by the seasonal shakes and are a fun dessert to serve up around St Patrick’s Day.

The cupcakes are buttermilk cupcakes flavored with vanilla and peppermint extracts, then dyed with green food coloring. I used lightly sweetened whipped cream instead of regular frosting as a nod to the real milkshakes. Whipped cream is light and contrasts well with the cupcakes. Add a few green sprinkles and a short straw before serving, then enjoy!

Gluten Free Peppermint Chocolate Souffle Cupcakes

Gluten Free Peppermint Chocolate Souffle Cupcakes

These flourless cupcakes weren’t only the best gluten-free cupcakes I’ve ever had, they were one of the top cupcakes I’ve ever had! Although they are flourless, these cakes are the opposite of dense.

By whipping the egg whites and gently folding them into the batter, you’re left with a light and fluffy cake which has an incredibly decadent, rich chocolate flavor without being overly sweet.
