What else says Christmas besides candy canes, Christmas trees and good ol’ Kris Kringle? Chocolate mint cupcakes. A tasty combination of chocolate cake batter, consisting of flour, cocoa powder, sugar, baking powder, salt, eggs, buttermilk, water, vegetable oil and what really gives these goodies their name: pure peppermint extract; the unfrosted cakes alone will be tough to resist, let alone once they’ve been frosted with a thick layer of traditional chocolate ganache frosting.
