We’re used to lemon cupcakes. We’re used to pumpkin cupcakes. Raspberry, blueberry, even. But…beetroot? We’ll be the first to admit, we were a wee bit hesitant to leap into the cupcake pool with these babies. But after seeing the beautiful color and the gorgeous shape, topped with some tasty chocolate ganache…it didn’t take much convincing.
