Who else is ready for spring? It’s taking a little too long this year, right? The groundhog may have issued us another few weeks, but these carrot cake cupcakes can bring you everyone’s favorite season a little early.

These cupcakes scream Spring, and don’t worry they are as easy to decorate as they are to make. And the recipe is modified to make 4 big cupcakes, rather than 12 regular sized, because who doesn’t want a bigger cupcake? What’s more, they can even be made in a toaster oven!

One word. Scrumptious. These carrot cake cupcakes are so good, and you’ll never even realize there’s carrot in them (except that you made them, so you know…)

I just need to share with you how delectable these really are, and that they are a must-try recipe. That is, of course, if you like carrots and cream cheese. ;-)

Easter may be long gone, but carrot cake, in all its glory, will stick around all year, and if you’re a fan, this cupcake recipe is for you. Four words: Maple. Cream. Cheese. Frosting.

Even if you choose to pass on the tiny carrot toppers (we don’t see why you would – they’re still carrot cakes), these babies are still loaded with all the right ingredients to finish off a weekend right or start a week on the right foot.

They’re light. They’re moist. They’re loaded with raisi… I kid, I kid! Raisins in carrot cupcakes should be illegal. And I’m not looking for any legal woes here, so let’s just keep the ol’ unwelcome wrinkled snacks where they belong… covered in chocolate and baked into cookies.

While the cupcakes are moist and the cream cheese frosting is as tangy and smooth as ever, I’d be remiss to not draw attention to those edible toppers. Because we all know carrot cupcakes can only be considered complete when they’re crowned with a candy melt carrot. Preheat your oven and get that cold glass of milk ready because these beauties are ready for their close-up (on your dessert table)!

Spring is in the air! So what does that mean for me?? Time to start making all things carrot cake, like these Carrot Cake Cookies, this Carrot Cake Cheesecake, a layered Carrot Cake (one of my all time favorite cakes), these Carrot Cake Bars, and why not some Carrot Cake Pancakes, and of course these perfectly fun and irresistible Carrot Cake Cupcakes!

Don’t you just love these tiny gold bunnies? They are one of my new favorite Easter decoration and they are actually a toy :). I just spray painted them gold.

CARROT CAKE CUPCAKES

Carrot cake is a classic treat that can be served any time of the year, but is especially tasty in the winter. Something about those cold, snowy days calls for a hearty cupcake flavored with ground up carrots, sliced walnuts, orange zest, buttermilk, ground cardamom and ground cinnamon. Once these cupcakes have baked and have had a chance to cool off, top them with a homemade cream cheese frosting. This classic frosting will make them even harder to resist!

For a healthier cupcake, consider making one from a batch of carrot cake batter. And before you ask – of course they’re healthy! They contain carrots! And cinnamon, nutmeg, flour, baking soda, salt, and a whole bunch of other things. The recipe also contains finely chopped walnuts, which are used both in the batter and as a topping, once they are baked and layered with lemony cream cheese frosting. How can you resist something so tasty and healthy!

When you want an instant reaction about how delicious your cupcakes is, this is the recipe to try. The carrot cupcake with carrot bits and raisins has just the right amount of bite and although you know they are healthy, these certainly don’t taste like health food. The cream cheese icing has just the right amount of tanginess to balance out the cupcake underneath in both taste and texture. Tangy, sweet and delicious; just the way you like it.

Carrot Cake Cupcakes

This Carrot Cake Cupcake recipe is just in time for fall baking, fund raiser bake sales, and holiday celebrations. While carrot cake is not just an autumn favorite, the spices in this beauty lend themselves well to this time of year. The aroma of baking carrot cake is a fall favorite as well with the nutmeg, cinnamon, vanilla, and brown sugar flowing through the house on the cool autumn breeze.
