Honey Lemon Cupcakes with Lemon Poppy Seed Buttercream


For a taste of springtime, or simply something different, check out these honey lemon cupcakes with lemon poppy seed buttercream. While they sound complicated, they are not as hard to make as you’d think. The cupcake batter contains lemon zest, honey, buttermilk, sugar, flour and other more-traditional ingredients like eggs and butter. The frosting is a mix of butter, sugar, lemon extract and poppyseeds. Simply bake the cupcakes and then slather on the frosting once they cool!

Eggy Cupcakes


The “Eggy” Cupcake is a cute vanilla cupcake that utilizes an apricot half to create an “eggy” look. The vanilla cupcake is rich and creamy flavored. The mild flavor makes this cupcake perfect for any party or season however, the cute factor of the “eggy” appearance can be bumped up a notch by using white buttercream to impersonate the white of the egg and while the apricot half is the perfect version of sunny side up.

Snowflake Cupcakes


Snowflake cupcakes can be served all winter long — not just around the holidays. Make yours out of standard ‘ol cupcake batter from your choice of flavors. Top of a luscious swirl of buttercream frosting (again, any flavor, any color, although blue is recommended.) And then add a few pearl dragees and some fondant snowflakes. If you want to top that, consider adding on a few sprinkles of shimmery edible sugar to make it look as though everything has (slightly) iced over. Tasty and beautiful!

Dutch Stroopwafel Cupcakes


A stroopwafel is a dutch treat — a waffle-shaped cookie flavored with caramel and maple syrup. They even have caramel sauce on the inside, making them all of the more tasty. If you can’t find stroopwafel’s in a grocery store near you, these cupcakes are the next best thing. The batter is enhanced with a little ground cinnamon, maple syrup and caramel sauce, and the frosting contains more of the same (minus the maple syrup.) Coffee Squared Cupcakes
