Peanut Butter Oreo Cupcakes


Some food combinations go together well, and then there are those that go way beyond that, and enter levels of greatness. These peanut butter Oreo cupcakes, for example, are destined for greatness. They are made from chocolate cupcake batter (flavored with brewed coffee, espresso powder, dark cocoa powder, sour cream and finely crushed peanut butter Oreo cookies), peanut butter buttercream frosting, and topped with a chunk of a peanut butter Oreo cookie. The best part? You can eat more than one!

Cookie Butter Filled Cupcakes with Cookie Butter Frosting


Cookie butter can be compared to Nutella – only it is flavored like sugar cookies, not hazelnuts and chocolate. Either way, it is just as tasty, and just as versatile. Take these cookie butter filled cupcakes for example. They are made from a simple vanilla cake recipe (turned into cupcakes, of course). Once they have been baked and have had a chance to cool, they are filled with a special cookie butter filling and topped off with cookie butter frosting. There is no such thing as too much cookie butter!

Brown Butter Cupcakes – If You’ve Ever Burnt Something, You Can Make Brown Butter


Baking with brown butter is slightly more complicated than simply mixing the ingredients together to form batter — but the results are worth it. These cupcakes contain brown butter, cake flour, baking powder, baking soda, salt, egg whites, sugar, vanilla extract and whole milk. The cream cheese frosting is made from lucuna powder (lucuna is a maple-like sweetener that is native to South America), cream cheese and more unsalted butter. Definitely different, definitely tasty.

Saffron Cupcakes: Golden Threads Make a Treasure


Saffron is an expensive spice made from the stamens of purple saffron crocus flowers. This does not mean, however, that the spice should not be in a cupcake. In fact, when added to this delectible vanilla cupcake batter, saffron adds a bright color – yellow – and unique taste to the mix. The frosting on these treats also contains saffron, however, a saffron infused butter has to be made first. It may sound like a lot of work, but it really is not, and the results are worth it!
