It’s worth noting that the tequila in these goodies is brushed onto the cooked cakes, so be forewarned if you’re sharing with a mixed age crowd! If not, just sit back, kick up your feet and enjoy the taste of summer in a few bites.

The Orange Crush, in cocktail form  (not to be confused with the cloyingly sweet soda variety), is synonymous with our beaches here on the Eastern Shore. A few simple ingredients are shaken up to create one of the freshest and fruitiest drinks you’ll find.  They’ve long been one of my favorites in the summertime. So, I got to thinking – why not in cupcake form?

Cake by the ocean, baby! If there ever was a cake deemed worthy of being consumed by the ocean – it’s most certainly these. Make them soon to welcome the warm weather! No regrets.

Begin this yummy journey with a vanilla base, then have a little fun adding flavors like orange zest and your favorite whiskey (be honest, you DO have a favorite), for an Old Fashioned disguised as a bite of cake. For this recipe, be careful not to use all of your whiskey in the base (or for tasting purposes…that’s important too!), as you need to reserve some for brushing on the baked cakes. This finishing touch adds back in a little of that “old fashioned” flavor you’ll inevitably bake out. Be sure to eat and drive responsibly with these, and don’t forget the bitters!

You could say that when you are boozing it up with these cupcakes, you’re doing it in a very classy way. Or you could just say, “TGIF!” Pina Colada Cupcakes are every bit as good as knocking back a few real-life Pina Coladas. The thing about this particular cupcake though, is that it has a double whammy when it comes to the alcohol. These babies are rum soaked AND filled with pineapple preserves, which no doubt acts as a wonderful vessel for gathering up a bit more of that rum flavor. It just might be that these are a don’t eat-and-drive delectable! (But wouldn’t they be worth it?)
