Lemon Drop Cupcakes

These Lemon Drop Cupcakes are a real treat to eat. The lemon-lime Soda added to the ingredients makes them tasty, light, fluffy and quite different from the traditional lemon drop cupcake. They are even more delicious when you add a drop of yellow food coloring to the whipped frosting and then decorate them with some sprinkles. Lemon Drop Cupcakes provide a welcome addition to other dishes for serving at a party or when you invite guests for afternoon tea.

PINA COLADA CUPCAKES

While this cupcake can’t take over mom’s duties for the day, it can offer her a taste of a tropical getaway. It’s a coconut cake brushed with pineapple syrup and then topped with a silky pineapple Swiss meringue buttercream. Topped with a cherry and a drink umbrella, this cupcake is about as close to the real thing as you can get without needing a straw. I made these cupcakes for a neighborhood block party and was told they were “the hit of the party,” so I promise you they’ll be making more appearances around here in the near future.

Chocolate-Nutella Spider Cupcakes

These chocolate-nutella spider cupcakes aren’t quite as scary as they sound. They are made from standard chocolate cupcake batter (you can use a mix of a from-scratch recipe, it doesn’t matter) and decorated with pretzels, Cocoa Puffs cereal, melted chocolate, chocolate sprinkles (the latter two go on the pretzels to make the spider legs) and Nutella. The Nutella acts like a standard frosting, and holds the Cocoa Puffs onto the top of each treat. These spiders are more tasty than scary!

Cupcake Exchange Party

Hosting a cupcake exchange party is a fun and interesting way to sample many types of cupcakes without all the work and clean up. This is an opportunity to learn new recipes, to sample a recipe before you try it on your own, and to gather with an intimate group of friends to chat and discuss all your favorite baking techniques. Another great thing about a cupcake exchange party is that you usually get to take a sampling home with you.
