Black Bottom Cupcakes


It’s true: chocolate and cheesecake almost go together better than chocolate and peanut butter do. And nothing proves this theory better than these black bottom cupcakes. All that they are is a chocolate cupcake mix with cheesecake (chock full of chocolate bits) inside of and on top of them. Hence the name — the chocolate is on the bottom. The results are what look like cheesecake cupcakes, until you open the liner and bite into one. So tasty that they don’t even need frosting!

Jasmine Cupcakes with Raspberry and Honey

If you truly want to serve your guests something unique and different, then it doesn’t get any better than these jasmine cupcakes with raspberry and honey. The trick to getting the jasmine flavor just right involves infusion jasmine flavored tea with butter, then adding it to the recipe alongside raspberry vinegar, flour, eggs, baking soda, baking powder and sugar. The frosting is a honey cream cheese, make literally from honey, butter and cream cheese. Top with fresh fruit, if you’d like.

Buffalo Chicken Cupcakes


No one ever said that cupcakes had to be sweet. They can also be savory and served for dinner, instead of for dessert. These buffalo chicken cupcakes fall into that category. Made from pizza dough, boneless chicken, onions, butter, mozzarella cheese and buffalo sauce, they make great hand-held appetizers, or even a whole meal, if you’d prefer. Simply brown the chicken and onions, roll up in the pizza dough, add cheese and bake. Serve with a side of buffalo sauce – or blue cheese, if you prefer.

Strawberry Cupcakes


The chopped strawberries and strawberry extract in these cupcakes make these the perfect springtime treat. Just mix together the strawberries and extract with butter, sugar, eggs, salt and flour to form a simple, yet tasty cupcake batter. Frost with the topping of your choice, although a vanilla buttercream, or even a strawberry flavored one would be perfect. Toss on some colored sprinkles, edible pearls or even sanding sugar to add to the fun before serving to your guests!

Coconut Cupcakes


Who’s up for a coconut cupcake topped with vanilla frosting and even more coconut? Exactly: everybody. The batter on these tasty treats is made from flour, salt, baking powder, yogurt, shredded coconut, vanilla, sugar, and a whole host of other ingredients. The frosting consisted of homemade vanilla buttercream that is just sweet enough to complement the coconut in the batter, as well as the shredded coconut that goes on top of the frosting.

Pudding Cupcakes


The thought of putting pudding into cupcake batter might sound a little strange to most people, but to those “in the know” it isn’t so bizarre. Adding prepared pudding to the mix makes the cupcakes thicker, moister and more…. yummy. These pudding cupcakes have tapioca pudding in the batter, alongside vanilla, flour, sugar, butter and other more “traditional” cupcake ingredients. By the time these are done baking, they are so moist that they don’t even need frosting — just a little sprinkle of powdered sugar!

Red Velvet Sweetheart Cupcakes


Are you ready for some cupcakes that are almost too cute to eat? Just take some Duncan Hines red velvet cupcake mix, bake, and then frost with homemade vanilla buttercream. For the crowning touch, place the cupcakes someplace where they can cool down quickly, and then whip up some chocolate coating. Dip the tops of each cupcake into the coating and sprinkle on some lovely heart-shaped or red and white sprinkles. Let the coating harden and then serve with a smile!

Peanut Butter Cup Cupcakes


There is nothing on earth that goes together better than chocolate and peanut butter. These peanut butter cup cupcakes are the perfect example of that. They consist of choclate cupcake batter (enhanced with a little chocolate pudding mix, espresso and sour cream) with a frozen Reese’s Peanut Butter cup miniature baked inside. Top them with homemade peanut butter buttercream (try not to eat the whole batch before you frost the cupcakes) and another mini Reese’s Peanut Butter cup.

Kaleidoscope Cupcakes


Kaleidoscope cupcakes are sweet little colorful treats with an added measure of fun. To achieve this multihued masterpiece the trick is to color the cupcake batter separately. Partially fill the cupcake wrappers and then add the colored batters in whatever design you choose. To finish off the adorable edibles, instead of icing or frosting on top which would hide these cuties, the cakes are split and the frosting is stuck in the middle. Picture perfect!
