Coconut Bird Nest Cupcakes

Hi guys! I am re-doing another recipe from the archives again and bringing it some new life. These coconut cupcakes were made in March 2013 (that’s three years ago!!!) when I just started blogging and they have remained a favorite over time.

I’ve of course played with the recipe since then as I develop as a baker and the version below is the current awesome state of a soft coconut cupcake topped with sweet coconut whipped frosting. I love how the coconut flavor is intense in these because of coconut cream (instead of coconut milk) and it makes my coconut-loving heart happy!

Here are some delicious Chocolate Mint Cupcakes that I made from the wonderful blog – How to Eat a Cupcake (update 2016 – sadly, this blog is no longer online). The only change I made to them was to leave out the chocolate chips, because I didn’t have any mini ones, and since I made mini sized cupcakes (see note at the top of the post), I knew regular chocolate chips would be just too big. These Chocolate Mint Cupcakes were awesome – and really – food bloggers rarely let me down!!

Blood Orange Chocolate Cupcakes

There’s something just wonderful about the bold, sweet flavors of blood oranges. Make sure you grab some before they are out of season and make some baked goods!

These cupcakes use my favorite chocolate cupcake recipe as a base and it’s boasting with sweet orange zest and dark chocolate made richer with a hint of coffee. Topped with a blood orange frosting (isn’t the color gorgeous??), they are finished with decorative edible candied blood oranges dipped in chocolate.
