The batter is so simple to prepare, in just one bowl, and makes the most perfect, fluffy. moist cupcakes with that perfect deep red hue and hint of cocoa. Paired with my favorite  cream cheese frosting, swirled nice and tall, these are a definite WINNER in my book!

The contrast of those lustrous swirls of midnight chocolate frosting and pastel sprinkles is, quite frankly, what dreams are made of.

The addition of dark cocoa powder along with melted chocolate gives it a double boost of the good stuff, and together the whole darn situation is magical.

These are probably one of the most elegant and ladylike cupcakes I’ve ever made.

I love the combination of white chocolate and matcha. The creamy and sweet vanilla flavor of the white chocolate and the earthy green flavor of the green tea really pairs well. Since buttercream frosting is already so sweet, I was quite wary of adding white chocolate into buttercream frosting. So I opted for a cream cheese frosting and it really helped to cut the sweetness. Alternatively, you could just top the cupcakes with melted white chocolate and call it a day.

One of my enduring obsessions is decorating cakes with edible gold leaf. It’s just so pretty and I’m drawn to the organic nature of its application. You probably know by now, I love a filled cupcake! I made some pink champagne pastry cream and used it to bring even more champagne flavor to the cakes.

They’re good for all celebrations – large and small! The cakes get a big dose of bubbly in the batter, and the pastry cream holds obvious fruity champagne flavor. If you’re not inclined to purchase champagne, then cream soda may be used in its place, and champagne flavoring oil may be added for a non-alcoholic version.
