Aren’t these cupcakes so cute? It’s almost a shame to cover up the pretty swirls of icing with white chocolate and sprinkles. The cupcakes are also white chocolate flavoured and have a lovely fine crumb.

There’s a couple tricky bits to these cupcakes. First is making sure you whip your meringue until it is stiff enough. The second part is to make sure your melted white chocolate mixture is cool enough before dipping the tops of the cupcakes into it, otherwise your meringue icing will just melt as soon as it hits the chocolate. Happy baking!

It’s finally feeling like spring and we’re enjoying the Cherry Blossom Festival! These beautiful trees show some of the most gorgeous pink blooms once a year, and this cupcake recipe pairs perfectly with the occasion.

Based on a vanilla cupcake recipe, these babies include almond flavoring and cherry pieces beneath a pretty pink almond cherry buttercream (made with actual cherry juice), all topped with shaved almonds and maraschinos. Here’s to cherry!
