These little cakes are slightly high maintenance. Like really high maintenance. But in addition to Mother’s Day weekend, it’s also ice cream weather, so we’d say it’s totally worth it.

Fudgy brownie bottoms, pistachio gelato on top, cream cheese frosting (!!!), topped with gooey chocolate, crushed pistachios, sprinkles and cherries. Perfection.
