I just couldn’t help myself when these came hot out of the oven!  I had to eat one…or two.  Even without the frosting they make great muffins perfect for lunch boxes or picnics. But let’s be honest, adding frosting just makes every better.

Even if you don’t make the sugar roses for these cupcakes, they are absolutely delicious and a chocolate lover’s dream come true. The centers are filled with rich chocolate ganache and the vanilla bean frosting swirl on top is a nice counter to all the chocolate. These cupcakes use my favorite chocolate cupcake recipe as a base and it’s boasting with sweet orange zest and dark chocolate made richer with a hint of coffee. Strawberry shortcake is the classic summertime and springtime dessert.  I grew up eating this classic dessert and look forward to baking it when it starts to heat up outside. Every year, our family would get together and strawberry pick in the farm fields of Wisconsin.  After our gigantic strawberry haul, mom would make a batch of strawberry shortcake and homemade strawberry jam.

This recipe is actually adapted from my Strawberry Shortcake recipe I made last year.  Because that recipe is such a hit, I wanted to extend it to cupcakes.  Because it gets so hot out in the summer, I wanted to make a frosting that would withstand the summer heat of New Orleans.  Even with the air at 66 degrees in the house, traditional whipped cream frosting melts into a big hot mess.

Dark Chocolate Cupcakes with Raspberry Buttercream Frosting

These are some of the most decadent cupcakes I’ve ever made – and in such a good way! They are rich and luscious and oh so irresistibly chocolatey! This is definitely one of my new favorite chocolate cupcake recipes (and if you want to make it more of a milder milk chocolate cupcake just reduce the cocoa 2 Tbsp and up the flour 2 more Tbsp, I tested them out both ways but definitely preferred the darker version here paired with the sweetness of the raspberry frosting). They are somewhat dense and deliciously fudgy and you’ll want to make them again and again.

Thin Mint Fudge Cupcakes

Thin Mint Fudge Cupcakes with chocolate minty cookie frosting and a layer of hot fudge sauce, yum!  These are a dream come true!  My friend ate one last night and she said “This was the best thing I’ve ever had.”

Since I only used the really fine cookie crumbs for the frosting, I used the larger pieces as “sprinkles” after I piped out the frosting.  No crumb left behind :)
