Key Lime Cupcakes

Key Lime Cupcakes

Who says that key lime has to be chained to the sad, dreary confines of a PIE? Who wants to always be a pie? I certainly do not, and I for one am incredibly happy to see that key lime cupcakes totally exist. I don’t always like my cupcakes oozing with sweetness, and these tangy bites of deliciousness ensure that I don’t get pummeled with sugar. While there is still plenty of sugar in them, these key lime cupcakes have a wonderful tanginess about them that hails back to the original desert (though the pie really does not hold a candle to these babies). Check them out before I eat them all, because…well, because I will.

These Whipped Chocolate Ganache Frosting cupcakes sound fancy enough to impress your friends and family, but you’ll be surprised at how easy they are to make! Rich and creamy, the ganache frosting goes perfectly with chocolate cupcakes, especially with small strawberries on top. Ganache is a mixture of chocolate and cream (pronounced guh-nosh) and is not as sweet as regular chocolate, which means you don’t have to choose between your diet and cupcakes!

Dark Chocolate- Oatmeal Cookie Cupcakes

Dark Chocolate Oatmeal Cookie Cupcakes

Oatmeal makes everything healthier, right? And dark chocolate is loaded with antioxidants, so this hybrid recipe shouldn’t dredge up any feelings of guilt. This one is more of a deep-dish cookie than a cupcake, but it has a cupcake’s shape, so we’re on board. Once you’ve converted these boring, flat piles of oatmeal, brown sugar and chocolate to tiny delicious cakes, top them with homemade ganache and enjoy thoroughly. You’ve earned it.
