Vegan Banana Blueberry Cupcakes

Vegan Banana Blueberry Cupcakes

Spring is here and these Vegan Banana Blueberry Cupcakes are just what you need!  A banana cake with a hint of cinnamon, bursting with warm blueberries and topped with frosting!  Yum!

I just couldn’t help myself when these came hot out of the oven!  I had to eat one…or two.  Even without the frosting they make great muffins perfect for lunch boxes or picnics. But let’s be honest, adding frosting just makes every better.

Chocolate Cherry Cupcakes

Chocolate Cherry Cupcakes

If you like chocolate covered cherries, you are going to love these Chocolate Cherry Cupcakes. A delicate spongy cupcake filled with cherry preserves and topped with cherry buttercream frosting. These are sure to be a crowd-pleaser!

Chocolate Cherry Cupcakes recipe highlights:

This recipe was inspired by my favorite candy, chocolate covered cherries.

The cupcake is full of chocolate flavor and kept moist with the help of oil and butter.

The frosting is a simple buttercream that is flavored with cherry preserves. Each cupcake gets a generous filling of cherry preserves and then topped with the cherry buttercream. There is no shortage of cherry flavor in this recipe.

Chocolate Mint Cupcakes

Chocolate Mint Cupcakes

Celebrate Earth Day with us with these yummy Chocolate Mint Cupcakes from Taste and Tell!

Mint lovers will go crazy for these Chocolate Mint Cupcakes that are topped with a smooth and creamy mint Swiss meringue buttercream frosting.

Here are some delicious Chocolate Mint Cupcakes that I made from the wonderful blog – How to Eat a Cupcake (update 2016 – sadly, this blog is no longer online). The only change I made to them was to leave out the chocolate chips, because I didn’t have any mini ones, and since I made mini sized cupcakes (see note at the top of the post), I knew regular chocolate chips would be just too big. These Chocolate Mint Cupcakes were awesome – and really – food bloggers rarely let me down!!

Mocha Cupcakes with Espresso Buttercream Frosting

Mocha Cupcakes with Espresso Buttercream Frosting

These mocha cupcakes are a chocolate and coffee lover’s dream come true. If you can’t get your day going without your favorite cup of coffee, you’re in luck.

I might even go so far as to suggest that you should just skip your morning cup of coffee or trip to Starbucks and have one of these instead. The cake part itself strikes a subtle balance between light chocolate and a hint of creamy coffee. Not overwhelming on either end of the spectrum, and the combination results in a smooth, clean flavor, which is perfect for topping with espresso-spiked buttercream.

Blood Orange Chocolate Cupcakes

Blood Orange Chocolate Cupcakes

There’s something just wonderful about the bold, sweet flavors of blood oranges. Make sure you grab some before they are out of season and make some baked goods!

These cupcakes use my favorite chocolate cupcake recipe as a base and it’s boasting with sweet orange zest and dark chocolate made richer with a hint of coffee. Topped with a blood orange frosting (isn’t the color gorgeous??), they are finished with decorative edible candied blood oranges dipped in chocolate.

Strawberry Shortcake Cupcakes

Strawberry Shortcake Cupcakes

Strawberry shortcake is the classic summertime and springtime dessert.  I grew up eating this classic dessert and look forward to baking it when it starts to heat up outside. Every year, our family would get together and strawberry pick in the farm fields of Wisconsin.  After our gigantic strawberry haul, mom would make a batch of strawberry shortcake and homemade strawberry jam.

This recipe is actually adapted from my Strawberry Shortcake recipe I made last year.  Because that recipe is such a hit, I wanted to extend it to cupcakes.  Because it gets so hot out in the summer, I wanted to make a frosting that would withstand the summer heat of New Orleans.  Even with the air at 66 degrees in the house, traditional whipped cream frosting melts into a big hot mess.

Thin Mint Fudge Cupcakes

Thin Mint Fudge Cupcakes

Thin Mint Fudge Cupcakes with chocolate minty cookie frosting and a layer of hot fudge sauce, yum!  These are a dream come true!  My friend ate one last night and she said “This was the best thing I’ve ever had.”

Since I only used the really fine cookie crumbs for the frosting, I used the larger pieces as “sprinkles” after I piped out the frosting.  No crumb left behind :)

Cinnamon Pancake Cupcakes with Maple Cream Cheese Frosting

Cinnamon Pancake Cupcakes with Maple Cream Cheese Frosting

Moist cinnamon pancake cupcakes with maple cream cheese frosting and mini pancake toppers! Enjoy breakfast for dessert!

I’ve always been a huge fan of breakfast. I enjoy it throughout the day. But I’ve only occasionally incorporated it into dessert. I’m not sure why that is. So, I needed things to change.

Chocolate Malt Espresso Cupcakes

Chocolate Malt Espresso Cupcakes
The perfect combination of chocolate, malted milk and coffee. They are insanely rich and chocolatey, with hints of malt and a kick of espresso.
These one bowl cupcakes are probably one of the easiest recipes ever, yet one of the most mind-blowingly delicious! The rich, moist and fudgy, cupcakes are topped with a light creamy chocolate malt espresso frosting, a drizzle of simple chocolate glaze and finished with a tiny swirl of sweet vanilla buttercream and a chocolate malt ball on top, pure decadence.
