Coconut Snowball Cupcakes

Interested in an Easter treat that does not contain chocolate or refer in some way to bunnies? Check out these coconut snowball cupcakes. The “snowball” in the name comes from the sweetened coconut tossed atop each of these frosted beauties — it resembles a birds nest, or a cloud of Easter grass emerging from a child’s basket. You can even add a few coconut m&m eggs to the top for just a touch of chocolate and to give them a little visual appeal. Nothing says Easter like some pastel creativity and coconut goodness!

Easter Tulip Cupcakes

Needless to say, creating these cupcakes for Easter will make you wish Easter came around more than just one time a year. The lemon curd combined with the butter in the frosting is mixed with just enough sweet sugar to create the perfectly balanced lemony-sweet taste. The light and fluffy vanilla cupcake underneath is the perfect base for the tangy frosting. The gorgeous tulip decoration symbolizes Easter’s new life and flowers that bloom in the springtime.

Cadbury Creme Egg Cupcakes

Chocolate cupcakes combined with Cadbury Creme Egg and chocolate ganache frosting make these sweet treats a chocolate lovers’ dream come true. The cupcakes themselves are a traditional blend of cake flour, unsweetened cocoa powder and other ingredients, but the difference lies in the frosting. By taking the insides of several Cadbury Creme Eggs and mixing it with butter, powdered sugar and vanilla extract, you end up with the perfect irresistable topping for these goodies!

Birds Nest Cupcakes

From the outset, birds nest cupcakes sound like some horrible experiment gone wrong, but once you see that the “birds nest” in the title refers to how these treats are decorated, it all makes sense. Without the creative decorating, these vanilla cupcakes with chocolate buttercream frosting seem pretty basic. But, once the sweetened coconut flakes (for the nest) and decorated blue chocolate Cadbury mini eggs have been added, complete with orange buttercream beaks and melted chocolate eyes, these cupcakes become a tasty masterpiece.

Pastel Cupcake Trio

Pastel Cupcake Trio

Edible pearls and carefully carved flowers are just some of the delicate details that differentiate this cupcake trio from the rest of the batch. A pastel ribbon gently wrapped around the base of the front cupcake adds to the adornment. These cupcakes will look right at home at Easter parties, springtime celebrations and even in place of a traditional wedding cake.
