These light, buttery, impossibly moist cupcakes star six layers of rainbow colors that bake up into a centerpiece-worthy treat perfect for birthdays, St. Patrick’s Day, and any other ordinary or extraordinary occasion in need of a little color and a whole lot of flavor.

Strawberry Shortcake Cupcakes

Strawberry shortcake is the classic summertime and springtime dessert.  I grew up eating this classic dessert and look forward to baking it when it starts to heat up outside. Every year, our family would get together and strawberry pick in the farm fields of Wisconsin.  After our gigantic strawberry haul, mom would make a batch of strawberry shortcake and homemade strawberry jam.

This recipe is actually adapted from my Strawberry Shortcake recipe I made last year.  Because that recipe is such a hit, I wanted to extend it to cupcakes.  Because it gets so hot out in the summer, I wanted to make a frosting that would withstand the summer heat of New Orleans.  Even with the air at 66 degrees in the house, traditional whipped cream frosting melts into a big hot mess.

Dark Chocolate Cupcakes with Raspberry Buttercream Frosting

These are some of the most decadent cupcakes I’ve ever made – and in such a good way! They are rich and luscious and oh so irresistibly chocolatey! This is definitely one of my new favorite chocolate cupcake recipes (and if you want to make it more of a milder milk chocolate cupcake just reduce the cocoa 2 Tbsp and up the flour 2 more Tbsp, I tested them out both ways but definitely preferred the darker version here paired with the sweetness of the raspberry frosting). They are somewhat dense and deliciously fudgy and you’ll want to make them again and again.

Thin Mint Fudge Cupcakes

Thin Mint Fudge Cupcakes with chocolate minty cookie frosting and a layer of hot fudge sauce, yum!  These are a dream come true!  My friend ate one last night and she said “This was the best thing I’ve ever had.”

Since I only used the really fine cookie crumbs for the frosting, I used the larger pieces as “sprinkles” after I piped out the frosting.  No crumb left behind :)

These one bowl cupcakes are probably one of the easiest recipes ever, yet one of the most mind-blowingly delicious! The rich, moist and fudgy, cupcakes are topped with a light creamy chocolate malt espresso frosting, a drizzle of simple chocolate glaze and finished with a tiny swirl of sweet vanilla buttercream and a chocolate malt ball on top, pure decadence.

As a Texan currently living in gray and dreary Germany, I miss the sun. My husband and I just returned from three weeks visiting friends and family in the South where we enjoyed t-shirt weather for all but a few days. When we returned to Berlin, it was 23°F and in the past 9 days, we’ve had a few hours of sunshine. I’ve never had a harder time getting out of bed!

I don’t like coffee or tea so for a pick-me-up, I turn to citrus goodies this time of year. They always boost my mood and make me a little more energetic. At least until the sugar high is over. 😉

Tiramisu Cupcakes

These Tiramisu Cupcakes are the jam! They are like little individual tiramisu cakes. They drizzled with an espresso Kahlua mixture, filled with tiramisu filling and topped with a light Kahlua mascarpone buttercream. It’s my new favorite, for sure!

Kicking it off with these cupcakes is definitely an awesome way to get started. They are setting the tone with how yummy they are. Irresistible really. If you love tiramisu, these cupcakes are your new favorite dessert. I could seriously just sit down with a spoon and a bowl of tiramisu filling and be a happy camper. It’s the bomb.com (yes, I still live in the 90s in my head).

Pink Squirrel Cocktail Inspired Cupcakes

I love pink glittery Christmas decor, and it seems to be showing up in my baked goods, too! This cupcake is inspired by the retro ‘Pink Squirrel’ cocktail. The drink is a bit like a milkshake served in a martini glass (yes please) and it’s flavored with crème de noyaux (almond liquor) and crème de cocoa.

I really had fun with this recipe and translated ‘Pink Squirrel’ into something more literal. I made my own glittering pink squirrel toppers from ready-made gum paste, a squirrel cookie cutter and glitter. You can find a cookie cutter similar to the one I used here.
