Lasagna Cupcakes

More proof that cupcakes can be more than dessert exists within this recipe. These lasagna cupcakes are from pasta sauce, ground beef, ricotta cheese, mozzarella cheese, and parmesan cheese. And the part that holds them all together — wonton wrappers. Yes, those super thin Chinese noodles fit better into a cupcake pan than traditional lasagna noodle, and do not have to be cooked first. Assemble as you would a standard lasagna, only in smaller form, and then bake.

Buffalo Chicken Cupcakes

No one ever said that cupcakes had to be sweet. They can also be savory and served for dinner, instead of for dessert. These buffalo chicken cupcakes fall into that category. Made from pizza dough, boneless chicken, onions, butter, mozzarella cheese and buffalo sauce, they make great hand-held appetizers, or even a whole meal, if you’d prefer. Simply brown the chicken and onions, roll up in the pizza dough, add cheese and bake. Serve with a side of buffalo sauce – or blue cheese, if you prefer.

Skinny Meatloaf Cupcakes with Mashed Potato Frosting are an unlikely cupcake to be sure, but are such a cute dinner idea that they beg to be made for potlucks, brunches, buffets, or other finger food appropriate gathering.
