Vanilla Almond Cupcakes

Vanilla Almond Cupcakes

These cupcakes are light and subtly sweet. The vanilla almond cupcake has vanilla tones with sliced almonds right in the mix. The cake is barely sweet to allow the almond to shine.

The frosting is a basic vanilla frosting with a hint of almond extract to cut the sweetness. The flavors in this cupcake really shine—neither the vanilla or almond outshine each other. These cupcakes are perfect for afternoon tea (or a small sweet treat for your love).

Brownie Cupcakes for Two

Brownie Cupcakes for Two

This recipe makes exactly TWO fudgy chocolate brownie cupcakes, in one bowl, right in the toaster oven! Topped with a creamy buttercream frosting, this recipe is perfect for Valentine’s Day, an anniversary or extra special small-batch after dinner treat.

I like to top them with a simple vanilla or chocolate buttercream, but feel free to mix and match with your cupcakes, for your own custom, gourmet flavor combinations!

Vanilla Cupcakes with Strawberry Filling and Strawberry Buttercream

Vanilla Cupcakes with Strawberry Filling and Strawberry Buttercream

This is a gorgeous Vanilla Bean Cupcake, using my favorite, from scratch, white cake recipe. It’s filled with strawberry preserves and topped with a creamy Strawberry Buttercream Frosting! Perfect for Valentine’s Day!

These would be a beautiful treat for your family on Valentine’s Day. Or the perfect cupcake for a class party!

Champagne Cupcakes

Champagne Cupcakes

These Champagne Cupcakes are super moist and full of champagne flavor! They’d be perfect For New Year’s Eve, or another special occasion, like Valentine’s Day!

This is a very moist cupcake. It’s not super dense, but it’s not super fluffy either. Kind of right down the middle. There’s just more than 1/2 a cup of champagne in the recipe, which gives it plenty of champagne flavor! The icing also has champagne. Hey, if you’re going to celebrate, go all out right?

Vegan Love: Dark Chocolate Cupcakes with Rich Chocolate Frosting

Vegan Love: Dark Chocolate Cupcakes with Rich Chocolate Frosting

Have you ever tried a vegan cupcake? The truth is, had I not been the one who made these cupcakes, I would honestly never guess that they were dairy and egg free, because they are perfectly decadent.

Both taste and texture went way beyond my expectations, truly (particularly the cake texture–so incredibly moist). Trust me, whether you’re vegan or not, these cupcakes are frickin’ yummy.

Chocolate Cupcakes with Flaming Strawberries

Chocolate Cupcakes with Flaming Strawberries

Call me easily amused, but these little torch-topped cupcakes delight me.  Besides being a cute novelty item for a party, I think they would add a little drama to the end of a romantic meal.

The cakes are just sweet enough, and have a light, fluffy crumb – the perfect vehicle for rich chocolate buttercream. The strawberries are hollowed out and filled with a bit of liquor, then ignited with a match. I’ve been looking for something different to serve for Valentine’s dessert, and this is definitely different.

One Bowl Vanilla Cupcakes for Two

One Bowl Vanilla Cupcakes for Two

Let’s face it: sometimes we all need a dessert that only makes two servings. Haven’t you always wished you could make just enough dessert for yourself? Or yourself and one other person?

These are definitely your typical white cake; fluffy and soft, full of vanilla flavor, and the perfect vehicle for some fluffy white frosting. And it only takes one bowl! Not creaming, no mixer, no folding… just you, a bowl and a spoon.

Deep, Dark and Rosy Red Velvet Cupcakes

Deep, Dark and Rosy Red Velvet Cupcakes

I know that a lot of people only associate red velvet with Christmas, but for me, red velvet is definitely a February thing. And for some reason this year, I really went full force with the V-Day eats.

These cupcakes were just the start, I loved them. I haven’t said that yet, but I really did love them. The chocolate flavor is awesome and subtle light flavors of the roses balance the chocolate out. AND that cream cheese frosting. Whoa.

That’s maybe the best thing ever. Seriously, so good.

Skinny Cherry Cupcakes for Valentine’s Day

Skinny Cherry Cupcakes for Valentine's Day

I am not a big “skinny” dessert fan. If I’m going to eat dessert, I prefer it to be quite satisfying. And usually, skinny desserts leave me wanting more.

But not this time. Although, really, I’m not sure how YOU qualify a dessert as skinny. So we will call these skinny-ish, or skinnier cupcakes. If you’re looking for a skinnier dessert recipe this New Year, give these cupcakes a try!

Pink Rose Cupcakes for your Sweet Valentine

Pink Rose Cupcakes for your Sweet Valentine

Nothing says Valentines Day more than roses and chocolate! This is the kind of rose I’d like to receive on Valentines Day. How about you?

Chocolate and raspberry together are a great combination, topped off with Buttercream Frosting and tinted pink with Americolor soft pink. Either vanilla extract or raspberry would make these super delicious.
