Cakespy: Truffle-Stuffed Cupcakes

What’s better than a chocolate cupcake? A chocolate cupcake with a chocolate truffle stuffed in it of course! These somewhat traditional chocolate cupcakes (the recipe uses bittersweet chocolate, buttermilk, cake flour, vanilla and a bunch of other more-standard ingredients) have chocolate truffles in the center. Simply place some of the batter in the cupcake liner, place a truffle (or two) in it, and then cover with more batter. Top with chocolate buttercream frosting and another truffle. Decadent and tasty!

Snicker Doodle Cupcakes

Snickerdoodles are warm, soft and delicious cinnamon-y cookies, so the cupcake version has a lot to compete with. However, these cupcakes are an equal opponent to the cookies, since they contain plenty of cinnamon, and even have an extra layer of the spice that is dusted onto the frosting once the cupcakes are baked. The frosting is a 7-minute frosting that is meringue-like, only sturdier. With the extra cinnamon on top, these treats are hard to pass up!

BOSTON CREAM PIE CUPCAKES

What dessert lover isn’t familiar with Boston Cream Pie? This traditional combination of vanilla cake, cream filling and chocolate ganache frosting is a Massachusetts classic – but you can make it anywhere in the country. These Boston Cream Pie cupcakes are close to their namesakes: the cake is vanilla flavored, the cream filling is just what such filling should be, and the ganache frosting, well, in this case, can be easily substituted for chocolate fudge frosting. They are tasty either way!
