Peanut Butter Cookie Cupcakes

The illusion of a peanut butter cookie is what makes these peanut butter cookie cupcakes so remarkable. The batter of these sweet treats consists of flour, baking powder, salt, baking soda, sour cream, peanut butter, eggs, vanilla extract, butter and several other classic ingredients. After baking, top these with homemade peanut butter cream cheese frosting (made from peanut butter, cream cheese, sugar and butter.) Add a cross hatch pattern to the top of each with a fork and serve!

Oreo Cupcakes

Few things are better than a double-stuf Oreo cookie. Except for these cupcakes, perhaps. A standard chocolate cake batter is darkened to look like an Oreo cookie thanks to the addition of dark cocoa powder. Other ingredients inlude flour, butter, sugar, eggs and vanilla extract. The frosting consists of corn syrup, butter, milk, shortening and powder sugar. Dollop a bit on top before serving, or make extra and pipe it inside of the cupcakes for an authentic Oreo cookie experience.

Cookie Cupcakes with Raspberry Fluff Frosting

Cookie Cupcakes with Raspberry Fluff Frosting are a curious dessert. Is it a cookie or a cupcake? Yes. It is a cocoa cupcake with a sandwich cookie baked inside and topped with a raspberry buttercream marshmallow cream frosting. This sweet treat is light enough for an afternoon tea but rich enough for your favorite child’s birthday party or Sunday dinner. Not too sweet, not too tangy, this dessert fits in anywhere you serve it.

Chocolate Chip Cookie Dough Cupcakes

These chocolate chip cookie dough cupcakes combine the best of both worlds: chocolate cupcakes and chocolate chip cookie dough. The batter is made from a devil’s food cake mix with chocolate pudding and espresso granules added to give it a bit of a kick. A ball of pre-made chocolate chip cookie dough goes into the center of each before baking. After removing these goodies from the oven, top with a vanilla buttercream, then garnish with chocolate chips and whole, baked cookie! Yum.

Oatmeal Raisin Cookie Cupcakes

Oatmeal Raisin Cookie cupcakes seem a lot like oatmeal raisin cookie muffins, but the rich and hearty cookie like cupcake is tasty by whatever name you choose to call it. These sweet treats would be perfect for a quick on-the-go breakfast, as well as an after school snack. They could be frosted quite nicely with a cream cheese icing or buttercream, but they are quite tasty on their own as well.

Thin Mint Cupcakes

Rich, dark and creamy are three great words to describe these Thin Mint cupcakes. Yes, you read that right: Thin Mint, like the Girl Scout Cookies. Made from cocoa powder, peppermint extract, ground Kopi Luwak coffee (or any dark roast), brewed coffee and a dash of Thin Mint crumbs, among other more traditional ingredients, the batter alone is hard to resist. Once they are topped with dark chocolate mint ganache and mint cream cheese frosting, they become completely irresistable.

Chocolate Chip Cookie Dough Cupcakes

Not an uncooked cookie dough lover? Think again! These cupcakes will definitely give you a run for more raw cookie cupcakes. These cupcakes are not that sweet so you it will be quite some time until you feel that sore on your throat – maybe after a dozen of these yummy cups? The frosting is definitely delicious, like soft cookies. Sweet cookies on a cup plus coffee or a cup of tea; sounds perfect!

Holiday OREO Stuffed Cupcakes

What do a box of Oreo cookies, a packet of red velvet cake mix, a jar of marshmallow creme and a tub of cool whip have in common? Did you say Holiday Oreo Stuffed Cupcakes? If you did, you would be right. These tasty treats have an entire Oreo cupcake baked into each cupcake (the trick is to place them in the cupcake liners, then top them with red velvet cupcake dough.) After they have cooled, stuff the middles with a combination of the cool whip and marshmallow creme, then serve!
