These are my go-to Tahitian Vanilla Bean White Cupcakes that I’ve taught in my cupcake classes that are perfect for picky kids that don’t like offbeat “creative” flavors and adults who want a sweet, fine-crumbed cake ideal for decorating (and eating!)

To make them Minnie Mouse, the cupcakes are piped with a swirl of pink buttercream frosting and then topped with mini Oreo ears and a fondant bow. So cute!

These Golden Oreo Cupcakes are made completely from scratch using my favourite vanilla cupcake recipe. The cupcakes are gorgeously buttery, fluffy and are everything a good vanilla cupcake should be

The vanilla cupcakes are swirled with a creamy vanilla frosting. The frosting is insanely delicious! I’m not even kidding when I tell you it tastes exactly like the vanilla crème filling inside the Oreo. Try it and you will see!

These Oreo Chocolate Cupcakes are super moist and delicious! I’m a big Oreo fan and these cupcakes bake that love right into cupcake perfection. This cupcake is nice and light, fluffy and moist.

Sunday’s pretty much the perfect day to indulge in just this type of treat. Isn’t that what the day was made for? Rest, relaxation and cupcakes?

Samoa Cupcakes

You guys, we have an EPIC cupcake today! Like epic in the way of chocolate coconut cupcakes with caramel coconut frosting garnished with coconut flakes and chocolate drizzles. aka SAMOA cupcakes!! My favorite Girl Scout Cookies in a cupcake form.

When thinking of it, I debated whether to make a salted caramel cupcake base or a chocolate cupcake but clearly chocolate won since I thought the caramel/coconut flavors will standout with a chocolate cupcake. And they sure do! The chocolate cupcake is decadent and amazing especially with the coconut flavors in it. The frosting is a sweet caramel and coconut whipped buttercream.

To finish off the cupcakes, drizzle more chocolate (and caramel!) along with some toasted coconut. If you happen to have some leftover cookies, then chop up some and throw them in the cupcake before baking but I know that is asking too much because really, who has leftover Girl Scout cookies?

Thin Mint Fudge Cupcakes

Thin Mint Fudge Cupcakes with chocolate minty cookie frosting and a layer of hot fudge sauce, yum!  These are a dream come true!  My friend ate one last night and she said “This was the best thing I’ve ever had.”

Since I only used the really fine cookie crumbs for the frosting, I used the larger pieces as “sprinkles” after I piped out the frosting.  No crumb left behind :)
