What I have for you today is a very basic lime cupcake recipe. And by basic, I very much do not mean “boring”– I mean simple! Crazy simple. So much so that when I taught this recipe the other night/spilled confectioners’ sugar all over the counter like I do EVERY SINGLE TIME, readers went totally bonkers over their simplicity. That may just be in my head but I swear they’re really easy.

Or you could just say, “TGIF!” Pina Colada Cupcakes are every bit as good as knocking back a few real-life Pina Coladas. The thing about this particular cupcake though, is that it has a double whammy when it comes to the alcohol. These babies are rum soaked AND filled with pineapple preserves, which no doubt acts as a wonderful vessel for gathering up a bit more of that rum flavor. It just might be that these are a don’t eat-and-drive delectable! (But wouldn’t they be worth it?)
