Strawberry Shortcake Cupcakes

Strawberry Shortcake Cupcakes

Strawberry shortcake is the classic summertime and springtime dessert.  I grew up eating this classic dessert and look forward to baking it when it starts to heat up outside. Every year, our family would get together and strawberry pick in the farm fields of Wisconsin.  After our gigantic strawberry haul, mom would make a batch of strawberry shortcake and homemade strawberry jam.

This recipe is actually adapted from my Strawberry Shortcake recipe I made last year.  Because that recipe is such a hit, I wanted to extend it to cupcakes.  Because it gets so hot out in the summer, I wanted to make a frosting that would withstand the summer heat of New Orleans.  Even with the air at 66 degrees in the house, traditional whipped cream frosting melts into a big hot mess.

Tiramisu Cupcakes

Tiramisu Cupcakes

These Tiramisu Cupcakes are the jam! They are like little individual tiramisu cakes. They drizzled with an espresso Kahlua mixture, filled with tiramisu filling and topped with a light Kahlua mascarpone buttercream. It’s my new favorite, for sure!

Kicking it off with these cupcakes is definitely an awesome way to get started. They are setting the tone with how yummy they are. Irresistible really. If you love tiramisu, these cupcakes are your new favorite dessert. I could seriously just sit down with a spoon and a bowl of tiramisu filling and be a happy camper. It’s the bomb.com (yes, I still live in the 90s in my head).

Parkin Cupcakes with Toffee Buttercream

Parkin Cupcakes with Toffee Buttercream

Something about the savory hint in toffee makes it the perfect flavor for cooler weather, especially snuggled up in front of a warm fire. Since these yummy cupcakes are made with parkin, a sticky, moist cake at its best when it is a few days old, they’re the perfect treats to make ahead and warm up for snuggle time. Whip them up a few days before you plan to eat them, then ice them with wonderful toffee and buttercream and enjoy their perfect flavor with some much deserved relaxation.

Key Lime Coconut Cupcakes

Key Lime Coconut Cupcakes

These cupcakes leave nothing to be desired when it comes to looks and flavor. You will be happy to discover that they are super easy to prepare, too! The real secret to their success is that they should be made from as many fresh ingredients as you have available. This is what makes them truly a homemade success, and avoids the traits of a plain old store bought cupcake.
