Besides the gloriously intense chocolate flavour and and mind-blowing texture these simple cakes have, they are also one of my favourites because they are the perfect way to show off sprinkles. The contrast of those lustrous swirls of midnight chocolate frosting and pastel sprinkles is, quite frankly, what dreams are made of.

The addition of dark cocoa powder along with melted chocolate gives it a double boost of the good stuff, and together the whole darn situation is magical.

One of my enduring obsessions is decorating cakes with edible gold leaf. It’s just so pretty and I’m drawn to the organic nature of its application. You probably know by now, I love a filled cupcake! I made some pink champagne pastry cream and used it to bring even more champagne flavor to the cakes.

They’re good for all celebrations – large and small! The cakes get a big dose of bubbly in the batter, and the pastry cream holds obvious fruity champagne flavor. If you’re not inclined to purchase champagne, then cream soda may be used in its place, and champagne flavoring oil may be added for a non-alcoholic version.

Spring is in the air! So what does that mean for me?? Time to start making all things carrot cake, like these Carrot Cake Cookies, this Carrot Cake Cheesecake, a layered Carrot Cake (one of my all time favorite cakes), these Carrot Cake Bars, and why not some Carrot Cake Pancakes, and of course these perfectly fun and irresistible Carrot Cake Cupcakes!

Don’t you just love these tiny gold bunnies? They are one of my new favorite Easter decoration and they are actually a toy :). I just spray painted them gold.

Strawberry shortcake is the classic summertime and springtime dessert.  I grew up eating this classic dessert and look forward to baking it when it starts to heat up outside. Every year, our family would get together and strawberry pick in the farm fields of Wisconsin.  After our gigantic strawberry haul, mom would make a batch of strawberry shortcake and homemade strawberry jam.

This recipe is actually adapted from my Strawberry Shortcake recipe I made last year.  Because that recipe is such a hit, I wanted to extend it to cupcakes.  Because it gets so hot out in the summer, I wanted to make a frosting that would withstand the summer heat of New Orleans.  Even with the air at 66 degrees in the house, traditional whipped cream frosting melts into a big hot mess.

These Tiramisu Cupcakes are the jam! They are like little individual tiramisu cakes. They drizzled with an espresso Kahlua mixture, filled with tiramisu filling and topped with a light Kahlua mascarpone buttercream. It’s my new favorite, for sure!

Kicking it off with these cupcakes is definitely an awesome way to get started. They are setting the tone with how yummy they are. Irresistible really. If you love tiramisu, these cupcakes are your new favorite dessert. I could seriously just sit down with a spoon and a bowl of tiramisu filling and be a happy camper.
