Carrot Cupcakes with Mascarpone Icing


The combination of carrot and mascarpone icing will surely bring you to heaven. The deliciously looking cupcakes are made out of orange zest, maple syrup and carrots. To add a little citrus taste, there is a mixture of orange juice. For the mascarpone icing, the zest of lemon is added for the citrus taste to blend with the carrot cupcake.
